1 medium head cauliflower (2 pound) cut into florets
1-1/2 pound Yukon gold potatoes, scrubbed and cut into 2-inch pieces
1 tablespoon olive oil
1-1/4 cup milk
3 tablespoons coconut oil
2 chopped green onions
Place cauliflower in a shallow baking pan coated with cooking spray and drizzle with oil. Toss to coat and roast at 400 degrees for 30 to 40 minutes, until just browned, stirring occasionally. Simmer potatoes in salted water 15 to 20 minutes, until very tender. Drain and mash. Mush cauliflower and potatoes, adding 2 tablespoons milk, until very finely chopped. Add cauliflower mixture to potatoes mixing in the oil, 1 teaspoon salt, 1/4 teaspoon pepper. Heat through over medium heat, stirring frequently. Top with green onion.
